Slow Cooker Chicken Cacciatore


4-6 pieces of boneless skinless chicken breast
2 cans of diced Italian style tomatoes slightly drained
1 can of quarter artichoke hearts drained and rinsed
1 8 oz package of button mushrooms quartered
1 medium to large bell pepper thinly sliced
1 medium yellow onion thinly sliced
1/2 cup of white wine (Chardonnay) (or chicken broth but wine is better)
1 tbsp canola oil
11/4 tsp oregano
11/4 tsp basil
2 tbsp of minced garlic (4cloves)
1/2 tsp salt
1/4 tsp pepper

Saute mushrooms, onion, garlic, artichoke hearts with a little salt in a pan with oil until onions are just slightly translucent. Place chicken, peppers, cooked vegetables, wine, and tomatoes with seasonings in crockpot for 5-8 hours. Pull chicken before serving and ladle over pasta (suggest linguini or fettucini)
