1 medium spaghetti squash place in 1/4" water in a covered dish microwave for 10 -12 minutes. In a medium skillet over medium heat add 2 tbl butter or margarine, 1 small onion (chopped or sliced, I chop) 1/4 tsp red pepper flakes, 1 tsp fresh thyme (if using dried use less) cook until onions are slightly brown. Add salt & pepper to taste. Using a fork scrape the insides of the squash and put in a bowl. Add to the bowl 1/2 cup sour cream and 1/4 cup shredded cheddar cheese and onion mixture. Mix together. spray baking dish with non stick spray. Transfer mixture to baking dish, cover with 1/4 cup of shredded cheddar cheese & bake on 375 for 15 - 20 minutes. I usually switch to broil for the last minute to get the cheese golden brown.
