Gluten-Free Ziti

Prepare time-10 minutes
Cook Time-4-5 hours
Servings-8

Ingredients~
1 lb brown rice penne noodles
1 lb fat free cottage cheese
3 cups spinach
1 can artichoke hearts
1 can diced tomatoes
2 cups marinara sauce
1-2 cups water

Basil, fennel, garlic, crushed red pepper

Directions~
Spray crockpot with non-stick cooking spray. Stir all ingredients together, cover and cook on low 4-5 hours.
 
Dairy-Free, Gluten-Free Brown Rice Pudding
Cook Time-3 hours
Number of servings-8

Ingredients~
2 1/2 cups cooked brown rice
1/2 cup brown sugar, packed
 1 1/2 cups Almond milk, unsweetened
2 tsp Vanilla extract
2 tsp Cinnamon
Pinch of salt
1/2 cup raisins (golden are best)
1//3 cup Almond Meal/flour

Directions~
Combine previously cooked brown rice, almond milk (soy, rice, coconut, or animal milks also would work), brown sugar, vanilla, cinnamon, and a pinch of salt in a small (2-4 quart) slow cooker or crockpot. Cook on low for 1 1/2 hours. Add the raisins and give the pudding a good stir to mix in. Let it cook for another 1 1/2 hours. (You can add more almond milk if it is too dry or starting to stick.)

Mix in almond meal and serve.


 

Gluten Free Beef Stew
For those of you who can not tolerate Gluten.
Minutes to Prepare-20 minutes
Number of servings-6

Ingredients~
2 lbs beef stew meat
1/4 cup soy or rice flour
1/2 tsp salt
1 clove  garlic
1 bay leaf
1 tsp paprika
1 tsp Worcestershire sauce
1 onion
1 1/2 cups of beef broth
3 potatoes
4 carrots

 Directions~
Place meat in slow cooker. In a small bowl mix together flour, salt, pepper and pour over the meat, stir to coat meat with the flour mixture. Stir in garlic, bay leaf, paprika, Worcestershire sauce, onion, beef broth, potatoes, carrots, and celery (IF desired).

Cover and cook on low setting for 10 to 12 hours. For a faster ready time you can cook on high, but for 4 to 6 hours only.
