Ingredients~
1 cup flour
1/4 cup sugar
1 tsp baking powder
1/2 tsp ground cinnamon
1 egg
1/4 cup milk
4 cups berries, fresh or frozen
1 cup sugar
1/4 cup flour
1/8 tsp sea salt
Directions~
In a medium bowl combine the first 4 ingredients ( 1cup flour, 1/4 cup sugar, 1 tsp baking powder, 1/2 tsp cinnamon); and use a fork to stir well. In another bowl whisk the egg, then add milk and oil. Pour the dry ingredients into the wet ones and mix well. The batter will be thick. Spray the inside of the crock pot and then spread the batter along the bottom. In a medium bowl combine the last 3 ingredients (1 cup sugar, 1/4 cup flour, 1/8 tsp salt). Place the berries in the sugar mixture and toss to coat. Pour the berries and sugar mixture over the top of the batter in the crock pot. Cover and cook on high for 2 1/2 hours, or until batter is cooked through. When its done turn the crock pot off and uncover, this allows the berry juice to thicken for 5 to 10 minutes.
